Our European imported Soy lecithin is a Non-GMO emulsifier added to chocolate bars to keep cocoa mass and cocoa butter from separating. It is used in numerous other applications requiring a natural emulsifier and/or lubricant. This Lecithin is extracted from soybean oil and comes in low viscosity liquid form, making it easier to add to an emulsion than granules.
